Colour & Appearance

Luminous pale yellow with greenish reflections, crystal clear in the glass. The magnum bottle promises slow, harmonious maturation.

Nose

Complex, multi-layered bouquet with white peach, apricot and citrus fruits. Underneath, mineral notes of damp slate and flint, complemented by fine herbal nuances of lemon balm and chamomile. The biodynamic viticulture reveals itself in the invigorating freshness and vibrancy.

Palate

Precise and focused with vibrant acidity structure, perfectly integrated. Yellow fruit meets saline minerality, carried by a subtle texture that lends depth and substance. At 12% alcohol, the elegance of the 2021 vintage shines through – cool, taut, with remarkable tension. The slight residual sweetness is barely perceptible, yet provides additional complexity and balance.

Finish

Long-lasting and precise with a saline, stony minerality that lingers. Citrus peel and white flowers resonate, underpinned by fine herbal spiciness.

Terroir & Origin

The Schlehdorn vineyard site in the Rheingau ranks among the estate’s finest parcels. The name “PJK.Unikat” signals a special selection – likely old vines on mineral-rich soils that give the wine its characteristic depth and tension.

Grape Variety & Vinification

100% Riesling from biodynamic viticulture (Demeter-certified since 2004). Peter Jakob Kühn works with minimal intervention, allowing the terroir maximum expression. Vinification is traditional, likely spontaneously fermented and aged in large wooden casks.

Food Pairing Recommendations

Scallops with lemon butter, turbot with herb sauce, veal brisket with horseradish, asparagus with Hollandaise sauce, aged Comté or Gruyère.

Special Features
