Wine description for parcellaire rouge #1 2021 from Johannes Zillinger

Colour & appearance

Bright, dark cherry red with subtle transparency - a wine that already visually announces its youth and freshness.

Nose

The full elegance of the art of cool-climate red wine is on display here. The cabernet franc-The dominance is unmistakable: fresh raspberries and redcurrants meet subtle notes of red pepper and tobacco. The Syrah contributes peppery spice and a hint of bresaola. The flavours are precisely interwoven, never intrusive - a nose that entices you to inhale again and again.

Palate

The parcellaire rouge #1 reveals its true character on the palate: crisp, juicy, with firm berry fruit and an electrifying minerality that bears witness to the limestone-sandstone soils of the Weinviertel. The texture is fine and elegant, the tannins present but never dominant. Herbal notes and a stony coolness lend the wine depth and complexity. The subtle use of wood from old barrels supports without overpowering. With only 12.5% alcohol, the wine remains playfully light and proves that strength is not synonymous with alcohol content.

General information

For his Parcellaire series, Johannes Zillinger deliberately chooses the coolest, wooded parcels of his oldest vineyards - north and north-east facing slopes that are exposed to the wind. The cuvée of 62% Cabernet Franc and 38% Syrah was hand-picked on 1 October 2022. The Syrah underwent a three-day cold pre-fermentation, while both grape varieties fermented spontaneously in open vats. The wine was matured in old barrels. With only 25 mg/l total sulphur, a pH value of 3.31 and 0.7 g residual sugar, this is a purist, unadorned wine.

Food pairing suggestions

The freshness and flavour of the wine harmonise perfectly with Beetle bean soup with pepper and piment d'Espelette. With stronger dishes such as Lamb Biryani or Chicken Vindaloo the wine shows its versatility - the lively acidity cuts through fat and spices.

Special features

A wine that proves that Austrian red wines can develop an independent, fresh style in a cooler climate. Zillinger's biodynamic approach and deliberate parcel selection create a red wine of electric precision - fun in a glass.
