Tasting note
Colour & Appearance
A radiant, translucent cherry red with ruby reflections – a red wine that announces in the glass that it relies on finesse rather than power.
Nose
Pure freshness: wild raspberry, redcurrant, lingonberry and sour cherry dance in harmony, flanked by red pepper and a herbal wreath of sage, thyme and wild mint. An ethereal aromatic thread floats above – crystal clear, invigorating, without any heaviness.
Palate
Dancing and lively. The red fruit is mouth-watering, the acidity present, the tannins ripe yet piquant. Herbal notes intertwine with the berry fruit in an interplay that remains light-footed yet possesses depth. The moderate 12 per cent lift the whole ensemble.
Finish
Long and salty, with persistent herbal spice – a finale that reveals cool vineyard sites.
Terroir & Origin
The Parcellaire line represents the coolest, forest-adjacent, north-east-facing plots of the estate around Velm-Götzendorf in the south-eastern Weinviertel, where the grapes ripen slowly on limestone-sandstone soils and retain their acidity. This is precisely what makes Syrah and Cabernet Franc possible here – as a cool, slender red wine interpretation rather than Mediterranean opulence.
Grape Variety & Vinification
Cuvée of Cabernet Franc and Syrah, harvested from cool, forest-adjacent parcels. Spontaneous fermentation and maturation in open vats – handcrafted work without cosmetic interventions, just as Johannes Zillinger has practised since his trip to Georgia in 2011: grapes in, trust in, wait.
Food Pairings
The herbal freshness calls for lamb with thyme, roast duck breast or beetroot carpaccio with walnuts. Also an exciting choice with mushroom dishes or a goat’s cheese – served slightly chilled, it shows its best side.
Special Features
A red wine that proves elegance has nothing to do with alcohol: 12 per cent, cool fruit, piquant spice. Now in his third generation, Johannes Zillinger works consistently close to nature – Demeter-certified, with sheep among the vines and home-brewed herbal teas for the vineyard. This wine represents the slender, cool side of this signature style.
