Colour & Appearance
Medium golden yellow with copper-coloured reflections – a hue that already hints at the skin contact time and lends the wine additional depth.
Nose
Expressive and multi-layered: vineyard peach, quince and apricot dominate the first impression, accompanied by fresh orange zest. With air contact, a fascinating spice layer unfolds from anise, dried ginger and walnut shell – aromas that will gain further precision with some bottle age.
Palate
Here the class of Rebholz’s style reveals itself: juicy and creamy in texture, yet surprisingly refreshing and lively. The 24-hour skin contact time gives the wine structure and grip without compromising elegance. The fine spice notes on the finish – ginger and anise – provide tension and drinking flow.
Finish
Medium to long, with lingering spice components and a refreshing acidity that invites the next sip. The subtle phenolic structure lends the finale pleasant grip.
Terroir & Origin
Grown on loess loam in the privileged vineyard sites of southern Palatinate. These soils give the Grauer Burgunder its characteristic creaminess and fullness, whilst the natural acidity structure is preserved.
Grape Variety & Vinification
After 24 hours of skin contact, natural sedimentation followed through pre-clarification, then maturation in stainless steel tank. This purist approach allows terroir and fruit to speak unadulterated – typical of Rebholz’s quality philosophy.
Food Pairing Recommendations
A versatile food companion that particularly excels with hearty cuisine: sautéed calf’s liver, roast pork, mushroom dishes, mature Comté or foie gras. Also an excellent choice with Asian dishes featuring ginger and with smoked fish.
