Sparkling wine information:
The essence of this sparkling wine lies in 100% Grillo grapes that are a proud three decades old. These beauties grow in Contrada Samperi near Marsala.
Production information:
To produce this fascinating wine, the grapes were fermented with wild yeasts in 500 l barriques. For a unique touch, fresh Grillo grape must was blended with a small amount of Vecchio Samperi sweet wine. This process was rounded off with 30 months of yeast ageing.
Colour/appearance:
This wine shines in an intense golden yellow and delights with its fine, broadly diffused perlage.
Scent:
In this 2019 Terzavia Brut Nature Cuvée VS, we are not content with a typical sparkling wine aroma. A surprising blend of orange, ripe pear, honey, peach compote and caramelised almonds and brittle is underpinned by dried herbs, malty notes and the scent of oyster shells, sea breeze and soy sauce.
Taste:
On the palate, this sparkling wine reveals itself as a multi-layered, multi-faceted delicacy in which the carbonic acid plays a playful but definite role. Juicy and precise, thanks to its terrific spiciness and fine sweetness, it calls up the umami experience - a palate feast that is ideal for discoverers of new pleasures!
Alternative food recommendations:
- Grilled figs with goat cheese and walnuts.
- Oysters Rockefeller
- Braised shoulder of wild hare with pears marinated in Marsala and honey-soaked walnuts.
