Tasting note

Colour & Appearance
Pale straw yellow with greenish reflections. Fine, persistent perlage with elegant, lively bubbles that bear witness to precise bottle fermentation.
Nose
Expressive and complex: fresh citrus fruits, green apple and white flowers form the aromatic foundation. Beneath these, fine notes of brioche, almonds and a slightly saline minerality that recalls its Mediterranean origin. With air contact, hints of herbs and lemon zest develop.
Palate
Crisp and precise with a vibrant acidity that harmonises perfectly with the creamy texture of the autolysis. The Brut Nature style reveals itself in its uncompromising dryness and purity. Lemon, grapefruit and saline minerality dominate, supported by a fine yeast note. Despite 13% alcohol, the wine feels feather-light and invigorating.
Finish
Long, fresh and saline with a fine bitterness from citrus peel and almonds. The minerality carries far and leaves an appetising, clean impression.
Terroir & Origin
The Grillo grapes come from vineyards in western Sicily, where the Mediterranean climate and lime-rich soils provide ideal conditions for this indigenous variety. Proximity to the sea lends the wine its characteristic saline minerality.
Grape Variety & Vinification
Grillo, the underrated Sicilian grape variety, demonstrates its full potential here as a sparkling wine base. Following classical bottle fermentation (Metodo Classico), the wine matures on the lees. The Brut Nature style without dosage underscores the de Bartoli house’s uncompromising quality philosophy.
Food Pairing Recommendations
An ideal aperitif that also shines with raw shellfish, oysters, sushi and sashimi. Pairs excellently with grilled fish, calamari, goat’s cheese or vitello tonnato. The saline minerality makes it the perfect companion to Mediterranean cuisine.
Special Features
A rare Sicilian sparkling wine that proves Grillo is capable of far more than merely serving as a Marsala base. With this Metodo Classico, the de Bartoli family continues its pioneering work for indigenous Sicilian grape varieties and creates a spumante of international calibre at a remarkably fair price.
