Wine description for Mâcon-Péronne Ars Vinea blanc AOC 2024 by Thomas-Collardot
- Character
- A Chardonnay of almost ascetic clarity: taut, salty, with precise citrus fruit and a fine chalky texture. Thomas-Collardot stands for transparency rather than opulence – no buttered toast, no clouds of vanilla, but instead a dry drive and fine grain. A wine that enlivens the table without dominating it.
- Terroir & Origin
- From Mâcon-Péronne in southern Burgundy, where Chardonnay develops a particularly linear fruit expression on calcareous soils. The estate itself is based in Puligny-Montrachet, run by Jacqueline Collardot and her son Matthieu on just 2.5 hectares. Certified organic since 2021, with deep respect for what the soil has to tell.
- Grape variety & Vinification
- Chardonnay in its purest form – vinified with a gentle hand: soft pressing, maturation in used 228-litre casks, ten months on the fine lees. Only lightly filtered, largely without added sulphur. The result is Burgundy without makeup: cool, precise, understated.
- Food recommendations
- Ideal with sole with lemon butter, scallops on leeks or young Comté. Poultry in a light jus or simply roasted cauliflower with almonds also find an equal counterpart here. The salty structure calls for cuisine with finesse, not heaviness.
