Wine Description for Le Dessous de la Cabane Brut Rosé V21/20 by Jeaunaux-Robin

Colour & Appearance
A deep salmon-pink rosé with elegant, fine mousse – the colour alone promises depth and character.
Nose
The nose is inviting and complex: strawberries and raspberries meet acid-driven goji berries and redcurrants. To this is added a winey, slightly smoky and peppery character that gives this Champagne a distinctive signature. Direct, fresh and seductive.
Palate
Le Dessous de la Cabane shows itself at its best on the palate: round, juicy and yet of remarkable freshness. The fruit unfolds in layers – stone fruit, red berries, a hint of mango, plus grapefruit and blood orange. Nothing feels opulent or intrusive; the fruit remains delicate and lively, embedded in a peppery acidity and fine minerality.
Finish
The finish is long, with chalky freshness and peppery spice lingering. The dosage of 7 g/L is impeccably integrated – not a gram of sugar too much, not a gram too little. A Champagne that lingers long in the memory.
Terroir & Origin
The grapes come from the Coteaux du Petit Morin on the Côte de Sézanne – a terroir of chalk, clay and bound flint that gives the wine its mineral depth and tension. The vines are around 45 years old and deliver concentrated, expressive fruit.
Grape Variety & Vinification
The blend of 60% Pinot Meunier, 30% Pinot Noir and 10% Chardonnay reflects the heart of Sézanne. Notably, 15% of the Meunier was used as still wine. Spontaneous fermentation took place one quarter in barrel, three quarters in stainless steel. Malolactic fermentation was deliberately left open – hence the lively acidity structure. Disgorged October 2024, dosage 7 g/L. Vintage blend 2021 and 2020.
Food Pairing Suggestions
Excellent with grilled salmon, tuna tartare or scallops with beurre blanc. Equally an ideal companion to charcuterie and mild goat’s cheeses. Or simply: in the glass, as an aperitif, without further explanation.
Special Features
Cyriel Jeaunaux produces Champagne in Sézanne with a precision and authenticity that far exceeds the ordinary. Le Dessous de la Cabane is not a Champagne for the grand stage – it is one for those who truly listen.
