In the glass

  1. Colour

Delicate salmon pink with copper highlights, fine and persistent mousse.

  2. Nose

Red berries such as strawberry and raspberry, accompanied by citrus zest, a hint of brioche and a pronounced, cool flinty minerality.

  3. Palate

Dry, taut and succulent; juicy red fruit, vibrant acidity, a chalky tension and a long, mineral-driven finish.

  4. Character

A precise, terroir-driven rosé Champagne with structure and depth – more of a wine for the table than mere aperitif fruit.

  5. Pairing

Salmon tartare with citrus, grilled prawns or entrecôte with herb butter.

  6. Notes

From Talus-Saint-Prix on the edge of the Côte des Blancs; the flinty soils (“Meulière”) shape its saline, chalky minerality, whilst the Meunier component contributes spice and richness.

Tasting note

Character
A rosé Champagne that makes no secret of its origins: dry, with a fine mousse and a tension rarely found in this style. The blend of Pinot Noir, Chardonnay and Pinot Meunier yields a wine that sets fruit and minerality in an exciting interplay – not heavy, yet full of substance. Anyone expecting a banal aperitif here will be pleasantly surprised: this rosé bears the hallmark of a winemaker who lets the soil speak.
Terroir & Origin
Talus-Saint-Prix lies on the southern edge of the Côte des Blancs, where it transitions into the Côte de Sézanne. The soil is studded with flint stones – silex once quarried for millstones, which gave the estate its cuvée names. The vines are planted on south-facing slopes above the Petit Morin, a tributary of the Marne. Unlike in neighbouring areas, Chardonnay does not dominate here; instead, Pinot Meunier takes centre stage – a grape that withstands the late frosts of the Vallée du Petit Morin and develops a distinctive spiciness on this terroir.
Grape Varieties & Vinification
The three classic Champagne varieties come together here to form a rosé that is more than the sum of its parts. Pinot Noir contributes structure and red fruit, Chardonnay provides freshness and length, while Pinot Meunier – the soul of the house – lends spice and depth. Cyril Jeaunaux and Clémence Robin farm biodynamically, ferment spontaneously without added yeasts and still press their grapes by hand. Maturation takes place in stainless steel tanks, glazed concrete and used oak casks at least ten years old – no wood should be perceptible, only terroir.
Food Pairings
A rosé Champagne of this structure can handle far more than just receptions. It pairs beautifully with cured salmon with dill and mustard sauce, tuna tartare with sesame, or duck confit with lentils. Red meat too – such as a herb-crusted rack of lamb – finds a worthy partner in this wine. For something simpler, try Comté or mature Gouda: the savoury depth of the cheese meets the wine’s refined acidity, and both emerge all the richer for it.
