Chardonnay – From Precision to Opulence

ripe chardonnay dove in the vineyard

Few white grape varieties are as versatile or as sensitive to terroir as Chardonnay. A true global variety, it thrives in almost every wine region and, like no other, mirrors both the winemaker’s hand and the particularities of its site. From cool Chablis to sun-drenched California, Chardonnay spans an impressive range – from lean and mineral to opulent and creamy, from reductive and flinty to oxidative and buttery.

In this article we explore the many facets of Chardonnay: from precise German interpretations and classic Burgundian style to impressive examples from Austria. We also look at the intriguing pairing with Auxerrois in Alsace and at the refined Blanc de Blancs Champagnes this versatile grape can produce.

Forgeurac: precision in sparkling form from Baden

With its Blanc de Blancs Sekt made purely from Chardonnay, the Franz Keller estate in the Kaiserstuhl demonstrates just how much potential German sparkling Chardonnay holds.

Its bright, radiant golden yellow and remarkably fine, even mousse already hint at the precision that defines this Sekt. The nose impresses with a chalky minerality as its foundation, above which a complex spiciness unfolds. The layered fruit ranges from lively citrus through subtle orange blossom and crisp apple to a surprising touch of pomegranate seeds and wild raspberries.

On the palate the true character of this Sekt comes to the fore – intellectually demanding yet immediately approachable. The structure has remarkable depth and a confident grip, combining juicy vibrancy with exceptional length. This Blanc vom Blanken works equally well as an elegant aperitif and as a partner to aromatically complex dishes.

Luckert – Zehnthof: organic clarity from Franconia

The VDP estate Luckert – Zehnthof is one of the flagship producers of Franconia and indeed of all Germany. Numerous accolades, most recently from the VINUM Wine Guide, which named it Winery of the Year, attest to the outstanding quality of these wines from the Main. With their “Sulzfelder Chardonnay trocken 2025”, the brothers Ulrich and Wolfgang Luckert show that Chardonnay has great potential in Franconia too.

The Luckerts’ wines are distinguished by remarkable clarity and precision, shining with a style all their own. Classified as “Deutscher Qualitätswein Franken”, this Chardonnay captivates with its bright straw-yellow colour and enchanting fruit. Ripe, delicate apple aromas dominate the bouquet, while the palate reveals a substantial, linear structure with fine acidity – pure minerality!

The wine is matured traditionally in large wooden casks after spontaneous fermentation, which brings out the terroir notes of Franconia’s limestone-rich soils perfectly and gives the Chardonnay a precise, unadulterated structure.

Domaine Zind-Humbrecht: an Alsatian take on terroir

Domaine Zind-Humbrecht, one of the leading biodynamic estates in Alsace, run by Olivier Humbrecht MW, offers a fascinating interpretation of Chardonnay alongside the local Auxerrois grape in its “Chardonnay Auxerrois ZIND 2022”.

The brilliant, deep golden yellow of ZIND gives way to a nose that is instantly seductive, complex and remarkably intense. An exotic bouquet of juicy mango and vibrant lime is accented by orange peel and a subtle ginger spice. Ripe apple and an intriguing hint of fine tobacco complete the picture. With air, the characteristic limestone minerality emerges, underlining the wine’s distinctive sense of place. Particularly striking is the delicate reductive note – that “struck match” aroma reminiscent of great young white Burgundy.

On the palate the wine shows crystalline precision – polished and taut, with a structuring acidity that interacts beautifully with the concentrated citrus fruit. The deep, stony minerality grips from the very first moment and never lets go. The finish is remarkably long, with intense saltiness and a fine tannic structure – an ideal partner for refined French cuisine and umami-rich Asian dishes.

Louise Brison: Kimmeridgian limestone in Champagne

Champagne Louise Brison, run by Delphine Brulez, is one of the most exciting discoveries of recent years. Her “Chardonnay de la Côte des Bar Brut Nature 2020” shows impressively what potential the often underrated Côte des Bar holds for Blanc de Blancs Champagne.

Medium straw yellow with a fine, lively mousse, the nose immediately reveals the signature of the Côte des Bar and Delphine Brulez’s uncompromising understanding of terroir. A slight oxidative note, perfectly balanced, brings out delicate hazelnut aromas that blend seamlessly with lemon meringue. Especially notable is the intense mineral component – crushed oyster shells and an almost tangible stoniness – given further complexity by notes of dried herbs.

On the palate this Blanc de Blancs captivates with its fascinating texture – vinous and full-bodied, yet with razor-sharp precision and chalky clarity. The mouthfeel combines silky elegance with a chalky grip, subtly complemented by a fine phenolic structure. The lively acidity is a direct expression of the Kimmeridgian limestone and gives the wine its remarkable vitality. The aromatic spectrum spans citrus, a discreet hint of sherry, yellow fruit and an iodine-tinged minerality that lingers into an impressively long finish.

Thomas Morey: Burgundian finesse from a Chassagne master

Thomas Morey, scion of one of the most important winemaking families in Chassagne-Montrachet, shows with his “Bourgogne Chardonnay AOC 2023” that even Burgundy’s entry level can offer remarkable quality when it comes from a master of his craft.

The nose immediately signals intelligent winemaking, with a touch of flint (reduction) that speaks of careful protection from oxidation. Behind it lies a fascinating aromatic profile – citrus peel, barely ripe apricot, yellow plum flesh and pear skin mingle with a subtle almond nuttiness that points to thoughtful ageing.

The palate shows the generous warmth of southern Burgundy rather than northern nervosity – a textbook reflection of the 2023 vintage. The mouthfeel is juicy, offering yellow fruit wrapped in gentle, tea-like tannins and a hint of smoke. Mineral notes form the backbone here, creating a wine of immediate appeal and generosity – hedonistic, approachable and eminently drinkable.

Franz Keller: Baden minerality from the Kaiserstuhl

The Franz Keller estate, one of the most renowned in Baden, demonstrates impressively with its “Kirchberg Oberrotweil Chardonnay GG 2022” the potential of the Kaiserstuhl’s volcanic terroir for world-class Chardonnay.

The nose reveals the wine’s class at once. A discreet veil of reduction, dosed just right, envelops a complex basket of juicy Williams pear, still-firm quince and sun-ripened mirabelles. Exotic star fruit adds a tropical note, while citrus and lime zest bring vibrant freshness.

Herbal touches of verbena and lemon balm are accented by fine fennel fronds. A hint of yeast dough adds depth, while crushed chalk and restrained oak form the mineral frame.

On the palate the wine’s fascinating duality comes through: elegant and invitingly drinkable on the one hand, with an untamed, energetic wildness on the other. Oak spice and a light smokiness provide structure, while juicy pears, fully ripe quince and concentrated citrus bring vibrancy. Above all, though, this is a wine that wins you over with texture – chalky minerality, grippy structure, juicy yet precise acidity and intelligently handled oak that never dominates.

Velich: Pannonian opulence from Lake Neusiedl

With its Pannonian climate, Burgenland offers ideal conditions for powerful, dense Chardonnays. Heinz Velich, one of Austria’s most accomplished white wine specialists, shows impressively with his “Darscho 2022” what is possible on the shores of Lake Neusiedl.

    Darscho 2022

Intense golden yellow, the Darscho opens with an impressive nose. Aromas of ripe orange, orange zest, lime and grated lime peel dominate. With air come notes of cinnamon, dry biscuits and flint, accompanied by almond cream and salted butter – an extraordinary complexity that seduces the senses.

The palate is juicy, fruity and invigorating. The crisp, fresh acidity is beautifully embedded in the fruit, rounded off by a creamy richness. Its tremendous fullness makes a statement while leaving a memory of vibrant liveliness – a wine of pure Burgundian finesse that pairs perfectly with ricotta-filled ravioli, grilled lobster or poulard with toasted almonds.

Tement: steep-slope elegance from southern Styria

The Tement estate, the leading quality producer of southern Styria, shows with its “Morillon Muschelkalk 2024” the impressive precision Chardonnay (traditionally called Morillon in Austria) can achieve on shell limestone and calcareous marl.

Bright lemon yellow with green reflections, the Morillon smells pure, clean and clear. Lemon balm, sorrel and lemon thyme rise from the glass. Delicate hints of its long contact with the lees can be detected, surrounded by a fine, smoky aura. A touch of sea spray and a noticeable ocean breeze support these impressions. It has strong character yet is very approachable, with notes of fresh pineapple, nashi pear and lime, while toasted coriander and fennel seeds lend it depth.

    Morillon Muschelkalk 2024

On the palate it carries these clear, precise aromas through faithfully. Clear and cool as a mountain stream, with racy acidity and fruit that ranges from tart to refreshing yet shows great depth. Always built on the mineral framework that surrounds it, a salty touch gives it drive and length. The very well-judged phenolic structure provides density and a compact presence – entirely weightless and ideal with herb-crusted veal fillet, glazed baby turnips or confit char.

    Rooted in chalk-white earth,
    kissed by the sunlight,
    Chardonnay transforms
    like no other.
    Now crystal-clear and razor-sharp,
    now lush and honey-soft.
Always a mirror of its origin,
an echo of the hand that shaped it.
