Wine Description for Fausoni Barbaresco DOCG 2021 by Sottimano

Colour & Appearance
Brilliantly luminous cherry red with a pale, transparent rim – typical of Nebbiolo with its characteristic elegance and finesse.
Nose
Deep and captivating, the Fausoni 2021 presents itself with a bouquet of sour cherry, plum and mulberry, which almost tends towards sloe. Particularly fascinating: the earthy, chalky-mineral component that recalls wet limestone. Undergrowth, resinous tree bark and restrained spice notes of allspice and pepper are completed by fresh herbs such as rosemary and lovage.
Palate
Aromatically concentrated, yet of impressive lightness. The fine-grained tannin is perfectly integrated and lends the wine structure and definition without ever feeling heavy. The fruit is precisely bound to the bitter compounds, which creates tension and depth. As it develops, lovage, mint, parsley and rosemary unfold, accompanied by white pepper and a hint of coffee. The cool minerality and subtle length are remarkable.
Finish
Long, cool and carried by fine spice. The herbal notes linger, underpinned by an elegant tannin structure that invites the next sip.
Terroir & Origin
The Fausoni vineyard site in Neive lies in a south-westerly aspect directly adjacent to the town. The 48-year-old vines have been organically farmed since the 1970s and yield a concentrated, terroir-driven Nebbiolo from calcareous soil at only 40 hl/ha.
Grape Variety & Vinification
100% Nebbiolo, destemmed and fermented on the skins for up to 60 days, with regular punching down of the cap in open stainless steel fermentation vessels. Ageing has taken place since 2020 in large, conical botti for 24 months – a traditional approach that gives the wine time and space to develop.
Food Pairing Suggestions
Braised beef ribs with savoy cabbage and soba noodles, roasted wild broccoli with toasted hazelnuts and mint or cauliflower salad with pomegranate and pistachios – the Fausoni harmonises equally well with robust meat dishes and spiced vegetarian compositions.
