Colour & Appearance
Medium straw yellow with lively, fine-beaded mousse, testament to precise winemaking.
Nose
The high Meunier content defines this Champagne with seductive fruitiness: ripe apples and pears dominate, accompanied by apricots, lemon zest and orange peel. Beneath these lie nuances of dried fruit and cider apples, complemented by delicate notes of almond pastries, salted pretzels and subtle herbs – a complex, inviting aromatics.
Palate
Here the Éclats reveals its full personality: juicy yet simultaneously herbal-saline, with a lively acidity tension that lends the wine structure and energy. Mineral hints of crushed chalk and flint provide depth and precision. The creamy texture contrasts elegantly with the invigorating perlage – a Champagne of impressive agility.
Finish
Medium to long, with persistent minerality and a saline freshness that invites the next sip. The fruit fades discreetly whilst the chalky precision dominates.
Terroir & Origin
From the Coteaux du Petit Morin in the Côte de Sézanne, where chalky and clayey soils with embedded flint provide mineral complexity. The approximately 45-year-old vines lend the wine depth and concentration.
Grape Variety & Winemaking
60% Meunier, 30% Pinot Noir, 10% Chardonnay from vintages 2021/22. Spontaneous fermentation, one quarter aged in large wooden cask, three quarters in stainless steel tank. No controlled malolactic fermentation. Disgorged April 2024, minimal dosage of 3.5 g/L – an authentic Extra Brut.
Food Pairing Suggestions
Perfect with oysters, smoked trout, scallops or goat’s cheese. Also excellent with fish carpaccio, sushi or pan-fried turbot. The saline minerality harmonises beautifully with seafood and lightly smoked dishes.
