Colour & Appearance
Clear, medium straw yellow with brilliant transparency – a classic appearance for an authentic Chablis.
Nose
Textbook precise: lemon with its zest, preserved lemons, crushed limestone and oyster shells define the mineral profile. These are joined by green plums, green apples and subtle white flowers – this is Chablis as it should be.
Palate
Here the Gabrielle reveals its true class: tense and energetic with a vibrant texture that offers more substance and flesh than a simple Chablis. The freshness is electrifying, the salinity almost tangible – this wine awakens longings for the Atlantic and keeps you coming back for more.

Grape Variety & Vinification
100% Chardonnay, hand-harvested on 9 September 2022. Direct pressing, spontaneous fermentation and 13 months ageing in stainless steel tank preserve the crystalline purity. Light filtration, minimal sulphur (35 mg/l) – purist vinification for maximum terroir expression.
Food Pairing Recommendations
The saline minerality practically calls out for seafood platters, oysters and raw shellfish. Equally excellent with risotto with green asparagus or pasta with Tropea onions and capers.
