- Pale gold shimmering with fine, relaxed mousse – a Champagne that announces its maturity and finesse visually.
- Nose
- Seductive bouquet of candied lemons and lemon zest, accompanied by oranges and kumquats. These are joined by notes of ripe and fresh apples as well as stone fruit. Floral accents of linden, acacia and hawthorn hover above, whilst white nougat, warm croissant, chalk and limestone provide complexity and depth.
- Palate
- Lively and precise with impressive depth and energy. This powerful, structured Blanc de Blancs combines fullness with freshness in masterful fashion – cool, forceful and citric, yet ripe and elegant. Saline minerality runs through the ethereal, clean body, a hint of wood is perfectly integrated. The balance between power and subtlety, a subtle extract sweetness and savoury notes gives this Champagne extraordinary character. Slightly iodine nuances underscore the maritime freshness.

- Long, cool and mineral with persistent citrus freshness and fine chalky notes.
- Terroir & Origin
- From the vineyard site Les Hauts Nemery in Avize, one of the most renowned Grand Cru terroirs of the Côte des Blancs. The Chardonnay vines over 60 years old are farmed organically and biodynamically – with horses, as traditional as it gets. The chalky terroir gives the wine its characteristic minerality and precision.
- Grape Variety & Vinification
- 100% Chardonnay from old vines. Spontaneous fermentation in oak barrels and ageing on lees impart complexity and texture. The 2019 vintage was topped up with 25% Reserve Perpetual and dosed at only 3 g/l as Extra Brut. Tirage on 23.6.2020, disgorgement on 10.1.2024 – over three and a half years on the lees.
- Food Pairing Recommendations
- Scallops, lobster, grilled turbot, oysters, sashimi, caviar, but also with poultry in cream sauce or sweetbreads. The saline minerality harmonises perfectly with seafood.
- Special Features
- An authentic grower Champagne from one of the pioneers of biodynamic viticulture in Champagne. The Mycorhize in the name refers to the fungal symbioses in the soil – an expression of the biodynamic philosophy of the House De Sousa.
