Wine Description for Cuvée Mycorhize Grand Cru Extra Brut L19 by De Sousa
- Colour & Appearance
- Pale gold with fine, relaxed mousseux – a visually understated yet promising presentation.
- Nose
- Seductively complex: candied lemons and lemon zest dominate initially, accompanied by oranges and kumquats. Behind these unfold ripe apples and stone fruit. Floral notes of linden, acacia and hawthorn hover above a base of white nougat, warm croissant, chalk and limestone – an aromatic profile of remarkable depth.
- Palate
- Lively and precise with impressive energy. This Blanc de Blancs combines power and structure with elegant finesse. Cool, forceful and citric, yet ripe and concentrated. The saline minerality lends the Champagne a floating lightness, whilst a hint of wood is perfectly integrated. The balance between powerful fullness and subtle elegance, between restrained residual sweetness and savoury notes, is masterful – a wine of pronounced character and crystalline clarity.
- Finish
- Long, precise and mineral with a hint of iodine and lingering freshness.
- Terroir & Origin
- From the single vineyard site Les Hauts Nemery in Avize, one of the most prestigious Grand Cru locations on the Côte des Blancs. The Chardonnay vines, over 60 years old, are cultivated organically and biodynamically, worked with horses – a commitment to sustainable vineyard management of the highest calibre.
- Grape Variety & Vinification
- 100% Chardonnay. Spontaneous fermentation in oak barrels with extended ageing on lees. The 2019 vintage is supplemented by 25% from a Perpetual Reserve. Tirage on 23.6.2020, disgorgement on 10.1.2024 – over three and a half years on the lees. Dosed at only 3 g/l as Extra Brut, which underscores the purity and precision of the terroir.
- Food Pairing Suggestions
- Scallops with lemon butter, lobster or langoustines, oysters, pan-fried turbot, sweetbreads in cream sauce, aged Comté or Beaufort.
- Special Features
- The name „Mycorhize“ (mycorrhiza) refers to the symbiotic relationship between fungi and vine roots – a reference to the biodynamic philosophy of the De Sousa house. A Champagne of extraordinary depth and authenticity that unites terroir and craftsmanship in perfection.
