The Thomas-Collardot estate demonstrates with this Crémant de Bourgogne that Burgundy is capable of far more than still wines. The classic cuvée of Chardonnay, Pinot Noir and Aligoté combines Burgundian finesse with the vibrancy of traditional bottle fermentation. With 12.5% alcohol and Brut dosage, this sparkling wine remains elegantly restrained – a counterpoint to opulent Champagnes, one that prioritises freshness and drinkability.
Terroir & Origin
The Côte Chalonnaise and adjoining regions in Burgundy have supplied the base wines for Crémant de Bourgogne for centuries. The limestone-rich soils and continental climate with its cool nights create ideal conditions for sparkling wines: the grapes ripen at moderate temperatures and retain that natural acidity which gives Crémant its structure. The 2020 vintage benefited from a warm, dry summer that produced healthy grapes with good ripeness.
Grape Variety & Vinification
The three-way blend is typical for the region: Chardonnay contributes elegance and structure, Pinot Noir lends body and depth, whilst Aligoté – often underestimated – provides lively freshness and mineral notes. Fermented using the méthode traditionnelle, the Crémant ages for at least nine months on the lees, which gives it creamy texture and complexity. Thomas-Collardot works in a craft, small-scale manner, which is reflected in the careful assemblage.
Food Pairing Suggestions
This Crémant is a versatile food companion: classically with oysters, scallops or smoked salmon, but also with goat’s cheese from Burgundy such as Charolais. The restrained dosage makes it an ideal aperitif, whilst the structure also pairs well with roasted poultry or mushroom dishes.
