Colour & appearance
Medium, slightly transparent Ruby Red - Classically Burgundian in its elegance and transparency, promising finesse even in the glass.
Nose
An aromatic lesson in how a regional Burgundy should smell. Sour cherries and Sweet cherries dominate, underpinned by Raspberry and Currant. These are joined by Undergrowth-notes and a fascinating, discreet Gunpowder-nuance that adds depth to the bouquet. The barrel work remains discreetly in the background - just the right amount.
Palate
This is where the true class shows itself: the wine masterfully balances between Body and Transparency. The fruit presents itself juicy and clearly defined, the Ripe acidity gives agility without sharpness. Particularly noteworthy is the pleasant fullness, which never loses its straightforwardness. The Tannin is exactly where it belongs - providing structure, but never inhibiting the drinking flow. A wine with ambition that nevertheless remains accessible.
Departure
Medium length with persistent Cherry fruit and a fine spiciness that lingers without dominating.
Terroir & origin
The grapes come mainly from vineyards on the Côte de Nuits, the heart of Burgundy. The organically cultivated vineyards provide grape material that authentically reflects the regional typicity.
Grape variety & vinification
Pinot Noir in pure culture. After destemming follows a cool pre-fermentation and Spontaneous fermentation. The 18-month maturation takes place on the fine lees in 228-litre barrels.Barriques (mainly François Frères) with under 20% new wood - a restrained use that does not mask the fruit.
Food pairing suggestions
Excellent for Fromage de tête with lamb's lettuce and walnuts, Fillet of catfish with beetroot or one Burgundian chestnut soup. The versatility of the wine also allows combinations with Duck confit, coq au vin or matured Soft cheeses.
