Wine Description for Elévation 424 Crémant de Bourgogne Extra Brut AOP 2021 by Boris Champy

Colour & Appearance
Rich golden yellow with copper reflections and lively, exuberant bubbles, indicating a vital mousse.
Nose
An aromatic bazaar for the senses: dried apricots and pears meet the characteristic oxidative notes of cut apples. These are joined by honeydew melon, orange blossom water and quince jelly. The complexity is rounded out by notes of shortbread biscuits, candied citrus peel, Darjeeling tea and beeswax – a generous, almost opulent aromatics.
Palate
Here the exciting duality of this Crémant reveals itself: the taut, almost cutting acidity and the powerful mousse contrast with the lush nose. On the palate, a remarkable breadth unfolds with wild, oxidative hints of apple or pear sparkling wine. The creamy texture serves as an elegant bridge between structure and fruit – a sparkling wine that challenges conventions.
Finish
Persistent and acid-driven, with lingering notes of quince and a fine salinity that underscores the freshness.
Terroir & Origin
The Aligoté vines thrive at 424 metres altitude in the Hautes-Côtes de Beaune – a region that Boris Champy sees as the future of Burgundy in the face of climate change. The altitude ensures freshness and tension despite warmer vintages.
Grape Variety & Vinification
Made exclusively from Aligoté, an often underestimated Burgundian grape variety. Biodynamic viticulture (Demeter-certified since the 1980s) and a conscious approach to oxidation shape the individual character of this Extra Brut with just 12.5% alcohol.
Food Pairing Suggestions
The oxidative complexity and taut acidity harmonise beautifully with mini quiches with apple, leek and smoked sour cream, scampi meatballs with quince and lemongrass chutney or pork ribs on braised quince sauerkraut.
Special Features
Boris Champy, formerly with Dominus and Clos de Lambrays, runs Burgundy’s first Demeter-certified winery. This Crémant embodies his bold, unconventional approach – a sparkling wine for discoverers, not traditionalists.
