Wine information
This Crémant is a 100 %iger Chenin Blanc from Liv Vincendeau. The fruit comes from an old vineyard with green and purple slate, volcanic rock and quartz. The fruit was harvested in early September 2021. After whole cluster pressing and spontaneous fermentation, the Chenin Blanc was fermented dry and bottled on 25 January 2022, where it underwent a second fermentation. After 14 months, the Crémant was disgorged. The dosage is less than 3 grams.

Nose
The golden Bulles de Liv is a Crémant de LoireThis is how you want it to be. It is expressive, juicy, offers typical Chenin notes such as pears and quinces, also a little wax, but above all it is fresh and powerful with citrus notes, especially those of lemon zest. In addition, there are herbs and rocks as well as a slightly earthy spiciness.
Palate
On the palate it goes with the Bulles de Liv immediately so. The stone fruit is there, but the citrus and spicy notes dominate the overall picture in a pleasant way. Liv has read at exactly the right time here, so that the fruit and the pressing acidity balance each other out very well. The very discreet dosage provides the necessary charm like an icing on the cake, even though the Crémant is actually bone dry. The sparkling wine provides vitality, even if you were sitting in a corner before, tired out. Afterwards, you are fully focused again and have had a very pleasant moment of enjoyment.
