Wine information
For this wine, Boris Champy used Pinot Noir from the En Bœuf parcel in Pommard. The parcel is located in the heights of Pommard just before Nantoux. The vine density is around 10,000 in Guyot cultivation. Boris Champy destemmed half of the grapes, so there are 50 % whole clusters. He extracted gently and aged the wine for twelve months in new wood for a third of the time. Pièce and two-thirds aged in one-year-old wood.

Boris Champys Pommard En Boeuf 2020 is a memorable, lively, fresh and dense Pinot Noir with clear notes of dark raspberries and ripe plums, the raps very quickly joined by cocoa and a little cinnamon. On top of that, there is a hint of the best wood. In addition, there is some cinnamon, bergamot and pipe tobacco alongside dark, slightly warmed chocolate.
Palate
On the palate the En Boeuf downright supple, without denying the typical earthiness of the appellation. But this is embedded in a red and dark berry crisp fruit, in notes of cherries and plums, laurel, tobacco and pepper. The wine has a lot of power, so that it can perfectly tolerate the new wood and raisins and presents itself very balanced and downright elegant even at a young age. An excellent Pommard that would fit in very well as a 1er Cru, without being one.
