Slightly cloudy straw yellow, greenish reflections, weak irregular perlage.
Nose
In keeping with the name and label, the nose exudes a certain wildness. Lemon zest and lemon tart are dominant. Some shortcrust pastry and dark toasted bread come to the surface. It exudes an ethereal charm. Fennel seed, freshly shaved fennel, toasted coriander seed and some aniseed spread out more. Ripe pear as well as some candied quince round it off.
Palate
On the palate, it benefits from freshness, reduction and lightness. The carbonic acid causes hardly any mousseux, so that it remains clear and direct on the palate. The acidity integrates very well into the overall picture. It also harmonises with the fruit and provides a constant interplay. In the aftertaste, it reveals a fine herbal spiciness, which is, however, dominated again and again by the citrus notes as well as the lushly designed yellow pear.
