Colour
medium straw yellow
Nose
The white Coteau Champenois still has a clear fermentation flavour on the nose, which is reminiscent of popping plums and sweet pears with onsen egg. There are also citric and zesty notes, a little patisserie and a hint of lime and chalk.
Palate
On the palate, the Chardonnay is uncomplicated with yellow and white-fleshed fruit and a light, round acidity. A clear reduction is also evident here. There are also notes of wood ageing and something savoury and zesty.
Food recommendations by Christoph Raffelt
- Sea bream au gratin with mushrooms, hazelnuts and melted butter
- Tart with courgette and chèvre
- Hot pot with braised prawns, spinach and coconut milk
