Tasting note
Color:
Rich lemon yellow with delicate green reflections
Nose:
An enormously yellow-fruity nose of lemon, grapefruit and orange flows from the glass. Tangerine, khaki and ripe pear come rushing in as support. Bitter oranges and their blossoms become increasingly prominent as the flavour progresses. The blossom of the apple tree also joins in. Cinnamon, a hint of clove and star anise provide clear, spicy accents. White pepper has a more subtle effect alongside freshly chopped almonds and pine nuts. Dried herbs work their magic in the background. Oregano, sage and tarragon are loud representatives. Stony and puristic. Clear and with very well-integrated fruit in its taut character.
Palate:
It builds up on the palate with a lot of pressure. It manages without any breadth or creaminess. Its acidity structure is restrained but essential. It subtly pushes forward without polarising. Fine bitters provide it with a backbone. The fruit is able to move forward along these bitter substances, rich in contrast. At the same time, this has an energising effect and opens up countless possibilities for food and wine pairings. The dried herbs characterise the finish. It remains stony, clear and salty with a lot of character at all times.
Food pairing suggestions
- Lollo Rosso with mandarin fillets and pickled pumpkin
- Yellow beetroot cooked in salt dough with parsley pesto and chopped walnuts
- Grilled red mullet with orange fennel
