Wine information
The Zieregg vineyard does not end at the Austrian-Slovenian border, but rather goes beyond it. In 2007, the Tements had the chance to take over the Slovenian part of their house vineyard and to found the Domaine Ciringa, named after the Slovenian name of the Zieregg. 2009 is the first Fosilni breg originated. The Ciringa site is characterised by coral limestone with brown earth. The vines are now between 12 and 21 years old. The Sauvignon Blanc was fermented spontaneously to 2.2 grams of residual sugar with 6.3 grams of acidity and matured for 18 to 20 months in large neutral wooden barrels and in stainless steel on the fine lees.

Nose
The 2021 Fosilni Breg is a deeply relaxed Sauvignon Blanc that is more filigree than expressive, more elegant than offensive. It smells of yellow pears, apples and a little cassis, herbs, limes and grapefruit, crushed stone and a little earth. It is as floating as it is earthy.
Palate
On the palate the Fosilni breg A silky and juicy picture with slightly chalky flavours and some tomato leaf, again with apples, pears and limes, but also mirabelle plums and gooseberries. Here too, the wine appears grounded, rich in nuances and playfully light in its acidity, while it becomes increasingly taut and powerful towards the finish and offers a hint of ginger and zest.
