The Azienda Agricola Sottimano was bought in the 60s by Rino Sottimano and is located in the middle of the Cottà site. In the following years, it was successively extended by the Currá, Fausoni, Basarin and Pajoré crus. Today the winery is run by son Andrea and his sisters Elena and Claudia. Situated in the triangle of Barbaresco, Neive, and Treiso, Sottimano has been working according to biodynamic guidelines for years in order to bottle the character of the five crus as precisely as possible.
The Cru Cottà is the winery's home vineyard and is located between the municipalities of Neive and Barbaresco and covers about 2.8 hectares with a south-western exposure. The vines are between 50 and 70 years old and combine the fleshy, dense polyphenols of the Neive sites with the strong tannin structure of Barbaresco.
Fermentation is always spontaneous with their own yeasts, maceration is usually 25 days and BSA is also spontaneous in French oak. The wines mature for 24 months in the barrel , 12 months of which are on the lees. The use of wood in winemaking has been modernised with the 2014 vintage, making the wines appear more accessible with immense vibration and depth even in their youth. The wines are bottled unfined and unfiltered.

Delicate bright cherry red with rusty reflections and light rim
Nose
Full of spice, it starts intensely on the nose. Black pepper, roasted coffee beans as well as dark chocolate shavings make the start. Delicate, soft nuances of cold smoke go in the same direction. Roasted hazelnuts provide a feeling of well-being that is familiar to all. Plum, elderberry and blackcurrant slowly warm up but are still in the early stages of their development. On the balsamic side, it shows warm leather. Gradually, some liquorice and aniseed are added. Silky woody aromas in the form of undergrowth, dried porcini mushrooms and pine needles are perfectly balanced and wonderfully integrated. These are precisely the components that will develop wonderfully with age.
Palate
Barbaresco Cotta presents itself, as usual, compact and dense. Its fleshy character plays wonderfully with the fine-grained but very present tannin. In a pleasant way, it lines the mouth. The dark fruit has a really hard time fighting against it. Especially plum and cassis are spreading more and more. Supported by a very present minerality, this leads to pure elegance. It appears juicy and enormously animating. Its salty appearance plays cat and mouse with its fine acid structure. The fruit comes out better in the finish. Complemented by liquorice, pepper spice and a little lovage.
