Notes
Demeter-certified and farmed biodynamically – the only Burgundian estate that ploughs all its vineyards entirely with horses. Spontaneous fermentation with a proportion of whole bunches, ageing with minimal new wood and bottling with only minimal sulphur additions.

Colour & appearance
Deep garnet red, dense at the core, with a gleam that speaks of the dark fruit of the 2020 vintage.
Nose
Remarkably consistent across vintages: preserved cherries and almonds, alongside violet and lavender, beneath which lies a hint of earth, undergrowth, a trace of blood and yeast. Finely woven, dense yet fresh at the same time.
Palate
Silky and succulent, with plenty of dark fruit and a fruit-sweet impression seasoned by fine Indian spices. The tannins are polished, the whole-bunch stems lend firmness, the acidity freshness and finesse — underscored by a fine minerality from the old vines.
Finish
Long, cool and mineral, with an echo of cherry and spice — a wine that already offers pleasure on its fruit today, yet will easily reward a decade of patience.
Terroir & origin
Les Lavières lies on the northern edge of Savigny-lès-Beaune towards Pernand-Vergelesses, facing south-south-east. The name refers to the laves — flat pieces of limestone once used here as roof tiles. The domaine owns 2.61 hectares in the heart of the vineyard site; the soils blend sandstone, sand and marl, with iron-rich oolite at the top and reddish-brown limestone below.
Grape variety & vinification
Pure Pinot Noir from vines around 50 years old. Spontaneous fermentation in wooden vats with a significant proportion of whole bunches, then gravity-fed into barriques and tonneaux with little new wood; around 14 months of ageing without racking, bottling mostly directly from the cask with minimal sulphur additions.

Special features
Chandon de Briailles is the only Burgundy estate to work its almost 14 hectares entirely with horses — Diva, Epi, Farandole and Gipsy pull the plough. Demeter-certified since 2011 and vinifying in a 12th-century Cistercian cellar, the house stands for a restrained, age-worthy style which William Kelley of the Wine Advocate has credited with fully expressing the potential of its vineyard sites.
