Sparkling golden yellow with delicate green reflections.
Nose
Oyster shell, wet chalk and white pepper, accompanied by subtle pear, quince and a play of dried herbs such as oregano and bay leaf.
Palate
Linear and salty with fine phenolics reminiscent of Sencha tea; the fruit remains firmly in the background, yielding to a mineral, chalky structure.
Character
A Burgundy of cool, almost maritime precision – slender, crisp and with a long, herbaceous finish.
Pairing
Pan-fried salmon, braised calf’s tongue or hearty vegetable and pulse dishes.
Notes
Domaine Chandon de Briailles farms biodynamically (Demeter) and vinifies this Chardonnay entirely without added sulphur – a rare, pure style far removed from oak-dominated clichés.
Tasting note
Colour & appearance
Sparkling golden yellow with delicate green, pale reflections.
Nose
Pure origin without any oak mask: oyster shell, wet chalk, fresh seaweed and a breath of salt spray. The shy fruit recalls pear, quince, persimmon and a hint of mango. Above this lies an entire spice cabinet: white pepper, oregano, tarragon, sage, bay leaf.
Palate
Linear and precise, a tightrope walk on chalky limestone. Saline and maritime, cool and complex. A fine phenolic texture reminiscent of Sencha tea provides the backbone; the fruit remains nobly restrained.
Finish
For minutes, the dried herbs and the salty weight linger – simply relentlessly mineral.
Terroir & origin
The Les Saucours plot covers just under 0.6 hectares of clay-limestone, planted with 10,000 vines per hectare in Savigny-lès-Beaune. At Chandon de Briailles, four horses (Diva, Epi, Farandole, Gipsy) work between the vine rows – the estate is the only one in Burgundy to farm nearly 14 hectares entirely by horse-drawn plough.
Grape variety & vinification
Chardonnay from the still young planting, aged 15–18 months in barriques (228 l) and demi-muids (600 l) on the lees. The designation Sans Sulfites Ajouté decrees sulphur-free winemaking without exception.
Food recommendations
Pan-fried salmon with pine nut and leek salsa dances with its salinity, a braised calf’s tongue with sweet-and-sour lentil vinaigrette sends it into the depths, and a millet bowl with peppers, beans and sweet potato brings out its vegan spiciness.
Special features
Demeter-certified, biodynamic – no rural exodus here. What makes this white Burgundy unique is the combination of sulphur-free bottling and neo-classical precision, perfected by siblings François and Claude de Nicolay in their twelfth-century Cistercian cellar.
