Tasting note
Character
A purist, finesse-rich Pinot Noir of remarkable transparency. This sulphur-free bottling presents itself fresh in the glass, carried by deep red fruit and free from concealing oak notes. The wine displays that timeless, purist elegance for which the house’s “neo-classical” style is known: a silky mouthfeel, a dancing structure and a subtle mineral vein.
Terroir & Origin
The grapes originate from the commune of Savigny-lès-Beaune in the heart of the Côte de Beaune. The de Nicolay family has been making wine here since 1834. The terroir is cultivated with maximum respect for biological balance: the soils are ploughed without exception using horse power to avoid compaction. The cooler conditions of the 2021 vintage are reflected in a brilliant acid structure and clear expression of terroir.
Grape Variety & Vinification
Pure Pinot Noir, vinified by Claude and François de Nicolay according to strict Demeter certification standards. Harvesting is carried out by hand. In the historic 12th-century Cistercian vaulted cellar, the wine matures in wooden casks following whole-bunch fermentation, with the proportion of new oak kept extremely low. This cuvée was bottled entirely without added sulphur, as well as without fining or filtration.
Food Pairings
An ideal partner for fine poultry dishes such as roasted quail or pheasant breast. Pairs equally excellently with pink-roasted rack of lamb, tender veal chop, as well as gently aged Crottin de Chavignol or classic mushroom dishes with chanterelles.
