Wine Description for Sauvignon BlancDAC 2024 from Sattlerhof

Colour & Appearance
Medium straw yellow with brilliant clarity – a visual promise of freshness and vibrancy.
Nose
Elegant and restrained rather than loud: lime and lemon lead, accompanied by greengage, green apples and a hint of blackcurrant. These are joined by okra pods, fresh herbs and a mineral note of stone dust – typical of the steep vineyard sites of South Styria.
Palate
Here the true class emerges: the wine achieves immediate drinkability through its perfect interplay of green fruit, zesty bite and agile acidity. A saline character lends the wine depth and tension. Despite its elegance and finesse, it is aromatically dense and expressive – a balancing act executed with mastery.
Finish
Fresh and lingering with a mineral aftertaste that long recalls the stony soils of South Styria.
Terroir & Origin
The grapes come from vines aged 5 to 15 years in steep vineyard sites between 300 and 600 metres altitude. The soils – a fascinating blend of quartz, sand, shell limestone, gravel and pebbles – give the wine its characteristic minerality and complexity.
Grape Variety & Vinification
100% Sauvignon Blanc, hand-harvested and spontaneously fermented in stainless steel. Ageing on full lees for 6 to 12 months gives the wine substance and texture without compromising its freshness. Perfectly balanced with 1.1 g/l residual sugar and 5.3 g/l acidity.
Food Pairing Recommendations
A versatile companion: ideal with goat’s cheese, green asparagus, scallops, sushi and sashimi. Also an excellent choice with fish carpaccio, prawns or a herb frittata.
Special Features
As the only regional wine from the renowned Sattlerhof, this Sauvignon Blanc often combines young vines from the vineyard sites or pre-selections of the single-vineyard wines – and impressively demonstrates that even an „entry-level wine“ can possess the highest quality and character.
