Terroir & Origin
Salicutti manages vineyards in the finest vineyard sites of Montalcino, where calcareous soils and the distinctive microclimate of the south-eastern slopes produce Sangiovese grapes of extraordinary concentration. The 2016 vintage is considered classic and balanced in Tuscany, with ideal conditions for structure and aromatic complexity. This grappa distils the essence of this terroir – the mineral depth, the spicy intensity and the noble austerity that make Brunello di Montalcino so unmistakable.
Grape Variety & Vinification
The basis of this grappa is formed by the pomace of Sangiovese Grosso, the local Brunello variety. After winemaking, the still-moist pomace is gently distilled to preserve aromatic complexity. Salicutti’s artisanal approach – small production quantities, traditional methods – is evident here too. Distillation presumably takes place in copper stills, followed by a resting period that gives the grappa harmony and integration. The result is a distillate of remarkably clear fruit and structured depth.
Food Pairing Recommendations
This grappa deserves to be enjoyed neat and with consideration – ideally after an opulent meal with bistecca alla fiorentina, game or aged Pecorino Toscano. It harmonises beautifully with dark chocolate or espresso and provides a worthy conclusion to a Tuscan meal. In the cold season also excellent with chestnuts or Cantuccini.
