- Colour & Appearance
- Transparent, luminous ruby red – classic for Sangiovese in its purest form.
- Nose
- An opulent basket of fully ripe cherries dominates the nose, underscored by exotic spice notes: black cardamom, juniper and bay leaf. These are joined by toasty wood spice, subtle smoke and fine notes of sandalwood and vetiver. Multi-layered, faceted, in constant evolution – a wine that demands large glasses and time.
- Palate
- The attack is super-juicy with crystal-clear cherry fruit, precise and expansive at once. Fine-grained, almost powdery tannins structure the wine with remarkable elegance. Aromas of dark chocolate, coffee cream and subtle roasted notes define the fruit. The animating ripe acidity drives an incredibly rapid drinking flow – hedonistic, yet never clumsy.
- Finish
- Long, juicy and carried by fine tannin structure. The freshness remains present through to the end.
- Terroir & Origin
- The 1.5-hectare cru vineyard site Sorgente sits at 450 metres altitude behind the Cantina. Heavy clay and sandy soils along with stony Galestro soils slow ripening and ensure lower alcohol with higher freshness. An underground water source minimises hydric stress – a clear advantage in times of climate warming. The soils have never been treated with conventional pesticides.
- Grape Variety & Vinification
- 100% Sangiovese from vines planted in 1994. Salicutti was Montalcino’s first organically certified winery. Since 2015, Sabine and Felix Eichbauer have continued the uncompromising organic approach of founder Francesco Leanza.
- Food Pairing Suggestions
- Bistecca alla Fiorentina, Ossobuco, Pappardelle al Cinghiale, aged Pecorino or Parmigiano Reggiano. Also an excellent choice with braised beef roast or game dishes.

- A Brunello with „racing stripes“ – hedonistically approachable, yet complex and terroir-driven. The combination of organic viticulture, pristine soils and climatically favourable vineyard site makes this wine an authentic expression of modern Montalcino philosophy.
