Wine Description for Vermouth 2023 500ml by Salicutti

Colour & Appearance
Luminous ruby red with characteristic, rusty-orange rim – a visual hint at the complex herbal maceration and the mature Sangiovese as its base.
Nose
Uncompromisingly authentic, this vermouth presents itself on the nose. Wormwood, roots and turmeric dominate the first impression, followed by balsamic hints of tincture, chamomile and herbs. The aromatics recall historical apothecary recipes – medicinal, concentrated, without any concession to pleasantness. A tribute to the original function of vermouth.
Palate
Here Salicutti’s radical philosophy reveals itself: the attack is uncompromisingly dry, built on extract rather than sweetness. The bitter structure is present and demanding – not for newcomers to the vermouth segment. Yet those who embrace it will be rewarded: crystal-clear precision, multifaceted depth, refined character. The 16 different herbs and spices are perfectly integrated, the barley distillate provides structure, the acacia honey rounds it off without sweetening. The astringency works invigoratingly, almost meditatively.
Finish
Long, cool, with lingering bitter notes of yarrow and nettle. Mint and lemon verbena provide a refreshing conclusion.
Terroir & Origin
From the Sangiovese vines planted in 1994 in Montalcino, which have never come into contact with conventional pesticides. Podere Salicutti was the first organically certified estate in the region – a pioneer that Sabine and Felix Eichbauer have continued with a critical eye since 2015.
Grape Variety & Vinification
100% Sangiovese as the base, aromatised with 16 herbal and spice infusions. Fortified with barley distillate to 22% vol., rounded off with acacia honey. A craftsmanship that unites tradition and uncompromising quality.
Food Pairing Recommendations
Neat as an aperitif for the experienced, classically in a Negroni or Manhattan. Harmonises beautifully with blue cheese, dark chocolate or game terrine.
