Wine Description for Saint-Aubin 1er Cru Le Puits AOC 2023 by Thomas Morey

Colour & Appearance
Bright lemon yellow with a characteristic green tint – a classic hallmark of the cool, elevated position of this Premier Cru parcel.
Nose
Crystalline and of impressive clarity. The cooler location manifests itself in a green-ripe fruitiness: greengage, green apple and lemon dominate, accompanied by subtle notes of pineapple. A light reduction lends depth, whilst discreet cream and vanilla aromas point to restrained oak usage.
Palate
Here the typical duality of this wine reveals itself: despite the cool, mineral character, it displays surprising roundness and creaminess. The juicy texture harmonises perfectly with the vintage-typical, rather soft acidity of the 2023, which nonetheless brings sufficient bite. A sweet core of ripe stone fruit is countered by mineral tension – the terroir speaks volumes. The peppery finish underscores its Premier Cru status.
Finish
Remarkably long with good presence. The mineral component carries far, whilst the fruit lingers elegantly.
Terroir & Origin
A rarity: only 0.6 hectares of Premier Cru in the vineyard site Le Puits, situated south-east above Saint-Aubin. The name alludes to an underground water source that supplies the vineyard constantly. The chalky, almost white soil with abundant flint stones shapes the mineral character. Planted in 2000 with Sélection Massale – genetic diversity rather than clones.
Grape Variety & Vinification
100% Chardonnay. Spontaneous fermentation in a combination of neutral barrel and tank, 20% new oak. Natural malolactic fermentation, lees ageing without bâtonnage. Minimal sulphiting (max. 35 mg/l) only in the final six months – a wine that preserves its authenticity.
Food Pairing Recommendations
Scallops in butter, pan-fried turbot, veal in cream sauce, poultry in cream sauce, mature Comté or Beaufort.
