Wine description for Ried Grassnitzberg Riff Sauvignon Blanc Erste STK Lage 2021 from Tement

Character
The Grassnitzberg reef from Tement represents the Top of the South Styrian Sauvignon Blanc culture. As a Erste STK site, this wine embodies the precision and depth that characterise the Styrian quality system. Tement, one of the pioneering families of the region, is a master of Mineral power of the terroir with the typical varietal flavours. The 2021 vintage benefited from ideal conditions that kept freshness and ripeness in balance.
Terroir & origin
Ried Grassnitzberg is located in the heart of southern Styria, where Opok floors - a calcareous marl - form the geological foundation. These sedimentary soils from the Tertiary period give the wines their characteristic flavour. Salty minerality and firm structure. The Pannonian-Mediterranean climate with cool nights preserves the acidity, while the hillside location guarantees optimal sunshine. The STK classification (Steirische Terroir- und Klassikweingüter) stands for strict quality criteria: low yields, hand-picking and strict designation of origin.
Grape variety & vinification
sauvignon blanc has found his Austrian home in southern Styria, where he produces wines of international importance. Tement works with old vines that deliver profound complexity. Vinification is presumably carried out with spontaneous fermentation and ageing in large wooden barrels or in steel tanks to preserve the purity of the fruit. With 13.5% alcohol and a dry orientation, this is a wine of concentrated elegance, which combines the power of the location with subtle restraint.
Food pairing suggestions
A wine of this class demands a corresponding culinary accompaniment: Scallops with herbal oil, Zander with butter foam sauce, Asparagus in various preparations or Goat cheese medium maturity. The mineral structure harmonises excellently with Oysters or Sushi, while the complexity also Veal shank or Risotto with porcini mushrooms can accompany you.
