Character
An aristocratic white wine of impressive structure and mineral tension. In this imposing Double Magnum, this Sauvignon Blanc matures extremely slowly, preserving its youthful freshness over many years. Stylistically, it presents itself dry, focused and characterised by an elegant, cool profile that is a world away from loud tropical fruit. On the palate, a taut acidity combines with subtle texture to create a complex, long-lasting wine experience.
Terroir & Origin
The Tement winery from Ehrenhausen shapes Southern Styria like almost no other estate. The steep vineyards on the Austrian-Slovenian border are famous for their calcareous soils. As an Erste STK Lage, the Ried Grassnitzberg vineyard is among the region’s most renowned origins. Here, the vines root deep into fossilised coral reef and limestone soils, lending the wine its unmistakable, saline-mineral nerve. Since 2022, the estate has been fully certified according to Demeter guidelines as well as by Respekt-BIODYN; the 2021 vintage already stems from this rigorous transition phase to biodynamics.
Grape Variety & Vinification
Sauvignon Blanc finds one of its most impressive global expressions in these Styrian limestone soils. Under the direction of Armin Tement, the cellar philosophy relies on pure restraint: the grapes are gently processed, spontaneously fermented, and matured with extended lees ageing in large wooden casks. At a moderate 13.0% ABV, this wine focuses on the puristic origin of the grape variety. Bottling in large format provides the perfect conditions for decades of cellaring potential.
Food Pairings
Thanks to its gripping minerality and cool structure, this terroir wine is an excellent match for refined dishes with a maritime influence. It pairs beautifully with pan-roasted turbot with herb butter, scallops on pea purée, or veal chops with delicate summer vegetables. It also provides a thrilling counterpoint to aged raw-milk cheese.
