Colour & Appearance
Deep ruby red with an almost black core – a visual statement that announces the concentration and maturity of this Barbera right from the glass.
Nose
Open-hearted and opulent, the Pairolero 2023 presents itself: black cherries, blackberries and mulberries dominate, complemented by violet plums and a hint of elderflower. The espresso crema provides an elegant, slightly spicy counterpoint to the opulent fruit. Pure seduction.
Palate
Supremely juicy and with impressive energy, the wine floods the mouth. The ripe cherry fruit is perfectly disciplined by a brilliant, precise acidity – the hallmark of great Barbera. Ripe, fine-grained tannins draw clear contours on the palate. At 15% alcohol, the Pairolero shows itself surprisingly lean and agile, with medium body and ruby-red radiance. A high-performance Barbera with athletic elegance.

Terroir & Origin
The Sottimano winery, founded in the 1960s by Rino Sottimano, lies in the magical triangle between Barbaresco, Neive and Treiso. The family today manages first-class crus such as Cottà, Currà, Fausoni, Basarin and Pajoré according to biodynamic principles.
Grape Variety & Vinification
100% Barbera, spontaneously fermented with native yeasts, 25 days of maceration. Malolactic fermentation occurs spontaneously in French oak, followed by 15 months of ageing in tonneau. Bottled unfiltered and unfined – pure authenticity.
Food Pairing Recommendations
A versatile companion to Ossobuco alla Milanese, Brasato al Barolo, Vitello Tonnato or aged hard cheeses such as Parmigiano Reggiano. Also a brilliant choice with mushroom risotto or truffle pasta.
