Colour & Appearance
Luminous golden yellow with characteristic green reflections – a visual foretaste of the intense freshness that distinguishes this olive oil. The colour already reveals the early harvest and careful processing of the Tonda Iblea olives.
Nose
An expressive, multi-layered bouquet that immediately demands attention. Green olives dominate powerfully, accompanied by a herbal firework of wheatgrass, chervil and parsley. Mediterranean herbs such as sage, tarragon and oregano lend the oil a refreshing, almost ethereal quality. Subtly, notes of pear and peach emerge, whilst walnut kernels, white pepper and juniper berry provide complexity and depth.
Palate
The texture is remarkable: initially mild and smooth, the oil coats the palate with velvety softness. Then its full personality unfolds – pine nuts, hazelnut and walnut come across as freshly chopped and elegant. The nutty components lead, whilst the herbal freshness provides support. The peppery notes build subtly, never intrusive, always balanced by the fruity elements. A distinctive oil with surprising finesse.
Finish
