- Colour & Appearance
- A delicately luminous salmon rosé with bright, brilliant reflections in the glass – the brief skin contact of the Pinot Noir reveals itself in this delicate colouration.
- Nose
- Enchantingly elegant, this Blanc de Noir oscillates between pale floral notes and subtly red-fruited accents. The fruit presents itself with finesse: blackcurrant, raspberry and a whisper of sour cherry merge into a delicate aromatic picture. In the background, spicy counterpoints from white pepper, allspice and a trace of cinnamon lend the wine additional complexity.
- Palate
- The attack is precise and focused – the fruit runs like a bundled ray straight across the palate, opening only in the finish. Here Vorgrimmler’s craftsmanship shines through: the red fruits unfold in perfect balance with the floral, soft aromas. What truly distinguishes this wine, however, is its pronounced minerality – chalky, linear, with a remarkable mouthfeel and grip that positively invites you to take another sip. The natural acidity ensures excellent drinkability.

- Refreshing and persistent with fine salinity, stemming from the chalky subsoil. The red fruit fades elegantly.
- Terroir & Origin
- The vines are rooted in loess soils over Dogger and Jurassic limestone from the Middle Jurassic (180-159 million years ago). The fertile loess has been continuously cultivated for 40 years. Vorgrimmler has practised unworked soil management for years, with over 80 plant species – an impressive example of biodiversity in the vineyard.
- Grape Variety & Vinification
- 100% Pinot Noir vinified as a white wine. The grapes are harvested early for optimal acidity levels. After pressing and natural sedimentation, fermentation follows at 18°C in steel tank – completely without additives, using wild yeast. Malolactic fermentation over winter, maturation on fine lees. Minimalist intervention: sulphur is added only once, shortly before bottling, in minimal quantities. At just 11% alcohol, a prime example of modern, thirst-quenching German wine culture.
- Food Pairing Suggestions
- Perfect with grilled salmon, tuna tataki, vitello tonnato or goat’s cheese salad. Also excellent as an aperitif or with Asian cuisine of moderate spice.
- Special Features
- Vorgrimmler’s KV cut reduces yields to a moderate 30-40 hl/ha without overexerting the vine. An authentic, unfiltered natural wine with character and soul.
