Tasting note

Wine information

For these three wines (blanc #1, blanc & sauvignon and rouge #1), Johannes Zillinger selects the coolest plots of the oldest vineyards: the plots close to the forest, facing north and north-east, and the windy hillside sites, all of which grow on limestone-sandstone soils. Parcellaire blanc & sauvignon is a cuvée of 62 % Pinot Blanc and 38 % Sauvignon Blanc. The grapes were harvested by hand on 15 September 2021. The Pinot Blanc was pressed spontaneously as a whole bunch in Kvevri and fermented there for six days before being fermented further in large wooden vats. The Chardonnay was pressed as a whole bunch and fermented spontaneously in used 500-litre tonneaux. It was matured for 12 months on the lees in 1,000 and 500 litre barrels. The total sulphur content is 30 mg/l, the pH value is 3.1 and the residual sugar is 3 grams.

Nose

This cuvée of Pinot Blanc and Sauvignon Blanc smells of verbena and lemon peel, a little salted lemon with notes of whitecurrants, a little unripe pineapple, celery green and stone. There is also a hint of saffron and green herbs.

Palate

The cuvée is juicy and silky on the palate. The attack is rounder and creamier than the taut nose would suggest. However, after a few moments, the taut citrus flavour and the accompanying lean and coolness become increasingly clear on the palate. Towards the finish, this is a highly agile, vibrantly fresh, slightly tart, mouthwatering wine with bright fruit, zesty piquancy, salty minerality and a chalky texture that offers very subtle resistance.

Food pairing suggestions

  • Oven-baked asparagus with sauce gribiche (Vegetable & Vegetarian)
  • Celery risotto with capers and lemon zest (Vegetable & Vegetarian)
  • Raw marinated mackerel with passion fruit mouse and avocado puree (fish)
