Wine Description for Les Galipes de Coulommes Premier Cru Extra Brut 2019 by Jean Servagnat

Colour & Appearance
Pale golden yellow with lively, fine bubbles. The mousse rises persistently and elegantly in the glass – a sign of precise handcrafted work and organic viticulture.
Nose
Restrained and complex in equal measure. Initially fresh citrus fruits and green apple dominate, then notes of brioche, roasted hazelnuts and a delicate chalky minerality unfold. The Pinot Meunier brings a subtle red berry fruit into play, lending the Champagne depth.
Palate
Taut and precise with crisp acidity, perfectly balanced by the minimal dosage. The texture is creamy, almost oily, with a core of stone fruit and saline minerality. The Pinot Meunier from the clayey chalk soils gives the wine body and structure, whilst the Chardonnay provides elegance and length. Not a gram of excess – this is Extra Brut in its purest form.
Finish
Long and chalky-dry with a hint of lemon zest and toasted bread. The saline minerality lingers and invites another sip.
Terroir & Origin
From the Petite Montagne de Reims, specifically from Coulommes-la-Montagne, where the amphitheatre-like arranged vineyards are dominated by Pinot Meunier. The clayey chalk soils in the north-west of the village meet sandier plains for Pinot Noir and Les Vignes Dieu for Chardonnay – a geological diversity that is reflected in the glass.
Grape Variety & Vinification
Cuvée from Pinot Meunier, Pinot Noir and Chardonnay from 3.5 hectares of organically managed Premier Cru vineyard sites. Spontaneous fermentation partly in stainless steel, partly in wood, with complete malolactic fermentation. Minimally dosed for perfect balance.
Food Pairing Suggestions
Oysters, scallops, sushi, pan-fried turbot or goat’s cheese. The saline minerality and taut structure make it an ideal companion for seafood.
