Wine profile
The picturesque location of Hohen-Sülzen, nestled in the Eisbachtal, is crucial to the stand-out feature of their wines. The singularity of the winemaker's art here springs from the thermal fluctuations ensured by the prevailing microclimate, which gives the wines a refreshing liveliness and elegance despite their high ripeness.
Processing
The binder, Sylvaner Alte Reben (Old Vines), comes from precious semi-tennary vines. A selection of precisely ripened grapes was made manually and led to natural fermentation in 1200-litre wooden barrels. Maturing on its fine lees until the following summer, the wine unfolds its optimal expressiveness.
Color
The eye is met by a deep golden yellow, subtly interspersed with green nuances.
Aroma
The 2020 Hohensülzen Silvaner Alte Reben triumphs with a bouquet of herbal scents. Dominant basil, nettle, lime blossom and elderflower aromas harmonise with hints of grapefruit, citrus, Granny Smith apple and passion fruit. Intense minerality rounds off the olfactory experience.
Taste
The first taste perception is almost painfully pleasant. The complex notes present themselves intensely with mineral undertones and a salty note. The palate is opulently embraced, paired with a delicate tannic structure that lingers on the finish and encourages hearty dishes.
Food recommendations
Serve this special drop with stuffed pumpkin gnocchi in sage butter, pasta sotto with calamaretti and olives, or fillet of beef with sweet orange-pistachio risotto. The intense flavours of this wine will transform the culinary into an intense umami experience.
