Elegant apricot with bright, gold-rosé shimmering reflections.
Nose
Small red berries, cherries and a hint of rhubarb meet meadow herbs, pepper and a delicate vanilla note – fruity, spicy and inviting.
Palate
Grippy and juicy on the palate; the red fruit combines with an enticing spiciness to create a dry, lively mouthfeel.
Character
A light-footed, cheerful rosé with substance – accessible yet shaped by the care of a biodynamically farmed VDP estate.
Pairing
An ideal choice with Mediterranean salads featuring goat’s cheese, grilled vegetables fresh off the barbecue, or light pasta dishes with tomato and herbs.
Notes
The hare motif was specially painted in oils and recalls the brown hare that has returned to the vineyards thanks to organic farming – a symbol of fertility and joie de vivre. On the palate, the rare combination of red berry fruit and peppery herbal spice with a gentle alcohol level is truly striking.
Tasting note
Colour & appearance
Fine apricot with pale gold-rosé reflections – delicate, almost floating in the glass.
Nose
Open and fragrant: small red berries and cherries, a splash of rhubarb alongside, behind them meadow herbs, black pepper and a faint hint of vanilla. Fruit and spice balance each other elegantly.
Palate
Grippy, juicy, dry. The red fruit meets an invigorating, peppery spice that gives the wine drive. Twelve per cent alcohol, not a gram of excess weight – a rosé that remains eminently drinkable without ever becoming banal.
Finish
Clean and spicy on the finish, with an aftertaste of red berries and herbs.
Terroir & origin
Rheinhessen, more precisely: the area around Nierstein and Nackenheim. Here, Carolin Gillot and Hans Oliver Spanier farm – with Kühling-Gillot and Battenfeld-Spanier – two united VDP estates. While their great Rieslings are shaped by the Rotliegend of the Roter Hang and by limestone soils in the Wonnegau and Zellertal, the Hase reveals the carefree side of this viticulture. Both estates have been farmed along biodynamic lines since 2005.
Grape variety & vinification
An unusual Rheinhessen assemblage of Syrah, Cabernet Sauvignon and Merlot – three Bordeaux and Rhône guests that here yield a dry, spicy rosé deliberately focused on freshness and drinkability.
Food recommendations
A summer wine with substance: with grilled vegetable skewers, pizza with fresh herbs, grilled turkey breast or a quinoa salad with red berries and feta. Also a delight on its own on the terrace.
Special features
The brown hare on the label – painted in oils especially for the estate – recalls Carolin’s and Oliver’s childhoods spent in nature. For a long time it had vanished from the intensively farmed fields; thanks to organic cultivation, it now bounds through the vineyards once again. A symbol of fertility and joie de vivre – and of a rosé that brings exactly that into the glass.
