Tasting note
Wine information
White-naped Mountain Gem is the name of a rose variety that is best picked early in the morning when it is still cool and the dew is still on the leaves. For a better understanding, Flo Busch and Paola Ponsich have divided the wine into Petite Nymph renamed. It is a cuvée of Carignan and Grenache Noir. The Grenache Noir comes from a vineyard with vines that are around 30 years old. The soil consists of limestone gravel and large river pebbles with a high quartz content. The Carignan comes from a vineyard with a mixture of yellow and blue limestone marl, sandstone, pebbles and fossils. After manual harvesting, the grapes were pressed and fermented spontaneously. Maturation took place in tanks for six months and the wine was bottled unfiltered.
Colour
an orange that rivals Aperol Spritz
Nose
Although the color of the Petite Nymphe 2023 looks so fruity, the wine is olfactorily more on the herbal-spicy side, accompanied by a hint of hash. There are also notes of flowers, grapefruit peel and sour cherries.
Palate
On the palate, the rosé is lively, juicy and fresh. The grassy, herbal notes can also be found here, supported by the lively acidity. There are also crisp red berries, some blood orange, aniseed and liquorice. The light tannin and a certain saltiness ensure a good drinking flow.
Food pairing suggestions
- Salad with thinly sliced lemon, grapefruit, fennel and mint (Vegetable & Vegetarian)
- Chickpea salad with herbs and codfish (fish)
- Grilled squid with white beans and pesto (fish)
