Wine Description for Chablis AOC 2023 1500ml Magnum by de l’Enclos

Character
A classic Chablis that embodies the mineral precision and crystalline clarity of this unique appellation. Domaine de l’Enclos delivers with this wine an authentic expression of Burgundy’s northernmost Chardonnay terroir – cool, taut and marked by vibrant freshness. The magnum bottle also promises a slower, more harmonious development of the wine.
Terroir & Origin
Chablis lies isolated, almost 100 kilometres north-west of the Côte d’Or, on Kimmeridgian soils – those legendary limestone formations with fossilised oyster shells from the Jurassic period. This geological peculiarity lends the wines their characteristic saline minerality and stony precision. The continental climate with cool temperatures ensures a long ripening period and preserves the natural acidity structure of the Chardonnay. The 2023 vintage benefited from a balanced growing cycle.
Grape Variety & Vinification
Chardonnay shows its purest face in Chablis – without the influence of barrique ageing, which is standard elsewhere in Burgundy. Instead, stainless steel tanks or neutral casks dominate, placing fruit and above all terroir centre stage. The result: green apple, citrus fruits, white flowers and that unmistakable flinty, wet stone note that distinguishes Chablis worldwide. The magnum size favours slower oxidation and thus more elegant maturation.
Food Pairing Recommendations
Chablis and oysters – a legendary pairing that seems virtually predestined by shared geological history. The wine also harmonises beautifully with seafood, scallops, sushi and sashimi. In classic French fashion it pairs with goat’s cheese, trout with almonds or poultry in cream sauce. The vibrant acidity cuts through butter and cream, whilst the minerality underscores salty components.
