Tasting note
Wine information
The Sinople - the word stands for a certain shade of green in heraldry - is a Chenin Blanc that comes from the 0.68-hectare Clos de Coulaine vineyard right next to the winery. The vines of this Cru Supérieur are around 30 years old and grow on a soil with clay and silt in the topsoil and white tuff in the subsoil. After whole bunch pressing, the Chenin Blanc was fermented spontaneously in wood, underwent malolactic fermentation and was matured for eleven months on the lees in barriques with a new wood content of 20%. Bâtonnage was carried out from time to time. After ageing in barriques, it matured for a further eight months in stainless steel.
Color
light golden yellow
Nose
The 2022 Sinople is an elegant and fine Chenin Blanc that is ripe but also acid-driven. The aroma is reminiscent of crisp pears and pear cream, a little pineapple and citrus, subtle notes of quince and lanolin with a hint of honey.
Palate
On the palate, the Chenin Blanc is silky in both acidity and texture. In just a few seconds, however, the acidity picks up speed, becoming agile and urgent in the juicy, white and also a little yellow-fleshed fruit. In the finish, there is also a hint of aniseed and fennel pollen as well as a tart, zesty note. The interplay of acidity, flavour and supple body is very fitting.
Food pairing suggestions
- Tempura of black tiger prawns with braised Chinese cabbage and masala (seafood)
- Vegetable korma with cashew cream (fish)
- Red Thai curry with coconut milk (Vegetable & Vegetarian)
