Wine information
This wonderful Pinot Noir comes from the Aux Fourneaux premier cru vineyard, which is located in the village of Savigny-lès-Beaune, but has no longer been labelled a "premier cru" since 2018 due to the classification of part of the vineyard as a local wine. Savigny-lès-Beaune itself, barely three and a half kilometres north-west of Beaune, is home to one of the largest vineyards in the region, covering 383 hectares. In the special premier cru site Aux Fourneaux, Domaine Chandon de Briailles has 1.68 hectares facing east, planted with vines over sixty years old. Their roots penetrate deep clay soil, which is enriched with lime on the surface in places. The processing of the grapes, which are completely whole, was carried out by spontaneous fermentation in wooden barrels, followed by 14 months of ageing without decanting or racking in barriques and tonneaux with a small amount of new wood. The wine was bottled unsulphurised directly from the barrel.

The eye enjoys a medium cherry red.
Nose
This sulphate-free wine shows a remarkable transparency. The olfactory impression is reminiscent of a warm, supple forest floor in summer, with hints of plums and red berries such as raspberries and wild strawberries. This impression is rounded off with traces of cinnamon cherries and wild berry yoghurt, though the riper fruitiness finds more emphasis with hints of yeast and dark flowers.
Taste
On the palate, this 2019 Aux Fourneaux Sans Sulfites ajouté is a little reserved at first, but it unfolds a silky elegance and an inviting charm. The ripe blueberry fruit, enveloped by creamy notes, gradually becomes visible. A fresh acidity and a noticeable presence of tannins develop an increasingly taut mouthfeel. But despite this quality, the wine is open and juicy, with silky tannins and an equally silky acidity. For a wine without a cru classification, the 2019 Aux Fourneaux Sans Sulfites ajouté shows impressive depth and complexity.
Alternatives to the food recommendations
This wine harmonises perfectly with duck breast in orange sauce, oyster mushrooms in cream sauce or venison escalope with braised wild berries.
