Colour & appearance

Pale straw yellow in colour with brilliant clarity and transparency, emphasising the purity and precision of this exceptional Aligoté.

Nose

A fascinating flavour profile opens up with wet stones and Citrus zestfollowed by elegant notes of white flowers. Crunchy stone fruit such as green apples and yellow pears harmonise perfectly with the characteristic minerality of Pebbles and savoury Oyster shell notes.

Palate

Despite the warm 2022 vintage, this Aligoté is remarkably disciplined. The attack is sinewy and slimTaut and supple without any harshness. The elegant elasticity and fine salinity give the wine a delicate vibration on the palate. Delicate and firmly knitted with a high inner density, filigree appearance and silky texture. The finish is citrusy, fresh and orchestrally long.

General information

Boris Champy, who took over the traditional domaine in 2019, focuses on Biodynamic cultivation in the Hautes-Côtes de Beaune. This Aligoté comes from two historic plots (planted in 1930 and 1987) at an altitude of 430 metres. The late harvest and ageing partly in new wood and partly in used barrels give the wine its exceptional complexity.

Food pairing suggestions

Perfect for Braised sauerkraut with quince and lemongrass, fried zander on quince cabbage or Szeged goulash. Its salty minerality and lively acidity make it the ideal accompaniment to seafood and hearty regional cuisine.

Special features

An exceptional Aligoté that epitomises the future of Burgundy at cooler altitudes. The Magnum bottle promises a slower, more harmonious development of this already impressive wine.
