Wine Description for Petit Aigle Bourgogne Pinot Noir – Élevé en Fût AOP 2023 by Boris Champy

Colour & Appearance
A transparent, clear ruby red – almost translucent, as one would expect from a meticulously crafted Burgundy. The colour already reveals what the wine promises: elegance before power.
Nose
The nose is fresh, lively and of striking clarity. Redcurrant, strawberry and sour cherry dominate, complemented by delicate notes of verbena and fine floral aromas. A hint of dark berries lurks in the background. The oak recedes pleasantly – here, fruit reigns supreme, unadulterated and invigorating.
Palate
On the palate, the promise of the nose is confirmed: juicy, crisp, lively. The mouth-watering acidity is the backbone of this wine and ensures a positively inviting drinking flow. Fine, well-integrated tannins provide structure without dominating. Red berries and sour cherry remain present, accompanied by a savoury, earthy note and a hint of undergrowth that recalls its Burgundian origins.
Finish
Medium-length, fresh and pleasantly acidity-driven. The wine ends cleanly and invites the next sip – the most honest compliment one can pay a Burgundy of this category.
Terroir & Origin
The grapes come from slopes with limestone, gravel and clay soils facing east to south-west – a classic Burgundian terroir that delivers both freshness and mineral substance in equal measure.
Grape Variety & Vinification
Pure Pinot Noir, 100% destemmed and spontaneously fermented in open vats. Gentle extraction, ten to twelve months ageing in tonneaux, bottled unfiltered. Partly from own young vine parcels, partly from Ecocert-certified organic vineyards of a friendly winemaker – a négociant project with genuine artisanal ambition.
Food Pairing Suggestions
A versatile companion: excellent with Coq au Vin, entrecôte with herb butter, grilled salmon or a classic charcuterie board. Also a happy choice with goat’s cheese or mushroom risotto.
