Tasting note
Colour & Appearance
Luminous, medium lemon yellow with vibrant reflections – a wine that already radiates energy and precision in the glass.
Nose
The nose is classic and immediately seductive: acacia flowers and a hint of honeysuckle meet ripe peaches and yellow plums. A subtle reduction lends depth and tension to the bouquet, whilst a fine vanilla and wood aroma testifies to careful oak ageing. An Aligoté that promises maturity and juiciness – and delivers on that promise.
Palate
On the palate, this wine unfolds with remarkable smoothness and silkiness. The body builds slowly and elegantly – from the tip of the palate through to the finish, concentration grows steadily. The acidity is ripe and precise, never shrill, but rather structure-giving and well-balanced. An Aligoté that leaves the cliché of the sharp Burgundy variety far behind.
Finish
Long, finely spiced and with sustained mineral freshness. The finish underscores the provenance from great altitude – cool, clear, enduring.
Terroir & Origin
The parcels lie in the Hautes-Côtes de Beaune at over 400 metres altitude – exceptionally high for Burgundy. The soils of limestone, calcareous marl and clay decisively shape the mineral character of the wine. The late harvest on 29 September – ten days after the other Hautes-Côtes sites – enables extraordinary ripeness of the grapes.
Grape Variety & Vinification
Pure Aligoté Doré (Golden Aligoté), sourced from an old sélection massale – a treasure of genetic diversity and identity. The vines are planted at an exceptional density of 10,000 stocks per hectare, trained in Guyot and Lyra. Spontaneous fermentation, followed by twelve months ageing on the lees: 70% in used barriques (pièces), 30% in stainless steel – a clever balance between complexity and freshness. The magnum bottle (1500 ml) guarantees ideal ageing conditions.
Food Pairing Suggestions
Excellent with grilled river crayfish and scallops with butter sauce. Equally an ideal companion to Époisses or Comté, to Quiche Lorraine or a classic Poulet rôti from Burgundy.
Special Features
A wine that redefines the Aligoté variety: instead of the often-cited sharp acidity, Boris Champy’s interpretation offers depth, texture and elegance. The rare sélection massale of Aligoté Doré combined with the exceptional altitude makes this wine a true insider tip from Burgundy – and in magnum format an ideal candidate for the cellar.
