Marjorie and Stéphane Gallet met at the agricultural college in Perpignan, but initially went their separate ways. It was their shared passion for horses and later wine that brought them together again. At that time, Stéphane worked on a larger farm in Maury, while Marjorie gained her first practical experience in biodynamics in Calce near Gauby. In 2003 she borrowed money from friends and started her own business. The area that gave her her name was actually called Roc Blanc, named after a white quartz vein that protrudes from the black slate. However, Marjorie decided to change the name to Roc des Anges, which means Angel Rock. In the meantime, the winery is one of the top addresses in the region and comprises 30 hectares of vines on a mosaic of different soils.
The Australe is a single vineyard wine and was planted in 2001. It comes from a Massale selection of Serine, an old Syrah variety from the northern Rhône. It took 14 years instead of the usual seven for the vines to adapt to the hard, deep soils and develop healthy productivity.

Dark ruby red with black core.
Nose
The 2020 Australe from Domaine Roc des Anges smells of black berry confit, smoked meat, dark tobacco and black olives. Its strikingly dark nose sings the high song of concentration and condensation of the aromas, which flow impenetrably from the goblet like black velvet.
Mouth
On the palate, the dark impression continues and is complemented by a spirited bitter note that again reminds of tobacco and black olives. Stimulatingly tart, its phenolic points the way far from the primary fruit and also contours it on the palate as a dark power for the advanced. Stimulatingly tart, it shows only the pith of the fruit, the acidity accelerates the velvety, dense nectar to a maximum and refers to the different terroirs of the winery, which produce wines with fine vibration and finesse even in the hottest part of France.
