- Hand-harvested Catarratto grapes are gently crushed, pressed after 24 hours of skin contact and spontaneously fermented. The wine matures for six months in stainless steel at 10°C with weekly bâtonnage, which gives it texture and complexity, before resting for two months in bottle.
